【Sakeman Pink in Kyoto】Yesterday I visited Yamamoto Honke brewery in Fushimi, Kyoto. Their sake style is clean and elegant focusing on food pairing, according to CEO. 3-starred Michelin star restaurant with 8 months reservation waiting, MIZAI, carries their sake exclusively, and been loved by many top restaurants in the area. The brewery was founded in 1677 and current CEO is on the tenth generation, Mr. Genbei Yamamoto. The family has been the hub for protecting and promoting the unique culture and heritage of Kyoto including the art of tea. Eleventh generation Mr. Koji Yamamoto is working on expanding the potential of sake, i.e. collaborating with top French chefs around the world to come up with the 'precision pairing' menu and educating next generation industry professionals. The brewery owns Yakitori restaurant attached to the brewery where you can enjoy exquisite local food with raw sake that just came out from next door.
